Coconut Chai Smoothie Recipe

It’s amazing what a few spices can do. They can take the most boring food and make it extraordinary…think about how bland everything would be without salt. Really blaaaaaaaa….nd.

However, when I think about it, I haven’t used a lot of spices in my smoothies. What made me think this, was this amazing chai smoothie I had the other day.

Vega sent me some Vega One Chai and it’s probably my favourite Vega smoothie product there is. Hands down. The chai flavour is exceptionally delicious. Now I’m looking for a way to make a hot version of this. Even though it’s obviously summer, I don’t think I ever stop sipping the hot drinks. I’m a year-round kettle boiler.

They also sent over some of their Antioxidant Omega Oil Blend, which I adore. You guys know I love my fats and this is super easy to pour onto salads or into my smoothies. I’m all about convenience.

Combining these two foods together are the perfect food marriage. With the healthy fats from the oil blend, and the complete protein, greens, antioxidants, probiotics, enzymes, vitamins, and minerals from the Vega One…you can’t ask for better nutrition for a meal in a glass.

Coconut Chai Smoothie

I love the Vega One Chai in the following smoothie recipe, however, if you can’t get your hands on it, just substitute it for a different protein and add in “chai-ish” spices (cinnamon, cardamom, nutmeg, ginger, cloves, and/or allspice) or make it super easy and use a pre-made chai spice mix. Also, if you don’t have an oil blend either, just add in one tablespoon of organic coconut oil. This recipe serves 2.

Coconut Chai Smoothie

  1. 1-1/2 to 2 cups of coconut milk
  2. 1 packet of Vega One Chai
  3. 1/2 teaspoon cinnamon
  4. 8-12 almond milk ice-cubes*
  5. Vanilla stevia, to taste
  6. 1/2 cup shredded coconut, unsweetened

*If you don’t have almond milk ice-cube, you can use normal ice cubes

Blend everything except the shredded coconut. Then, add the coconut, but just mix it in with a spoon.

Pour into glasses and top with a little more coconut and cinnamon.

Vega Chai Shake

I love eating my smoothies with a spoon and the addition of the coconut is delicious (I like to chew my smoothies, so it seems).

Here’s a cheap tip for coconut milk – simply pour a can of it into a pitcher, add 2-3 cans of water, and stir. It’s SO cheap to make coconut milk this way and I like a change from almond milk sometimes. There’s no blending or hacking away at a coconut shell. You know I like things simple! FYI: We get this milk at Superstore, in the ethnic section and people, it’s cheap!

    I love their chai flavor! I made a pear-cardamom smoothie with it in the past. Love this coconut idea! Maybe I should combine all the flavors… :)

    I’m definitely going to try this recipe later today, although I don’t think I’ve ever seen Chai flavoured Vega powder near me. Where did you purchase it? I might have to sub-in some sugar free chai syrup! What a great combination of flavours.

    Molly – I got mine from myvega.com, but you can also use a protein and add chai flavours for something similar!
