Healthy Peanut Butter Freezer Cookies

I’m really getting a hang of this protein thing. I’m even putting it in my healthy snack foods. Take these cookies. I’m kind of crazy about them…this lovely month of August one of my goals is to avoid sugar and, of course, keep eating lots of protein. This lovely snack/dessert helps me manage both of those resolutions.

My first bite reminded me of a healthy peanut butter version of Chocolate Odies, which are one of my many weaknesses as far as cookies go. These are super quick to whip up and there’s no baking involved which makes me enormously happy. I don’t like baking in summer, not at all. These make around 16 cookies.

Health Peanut Butter Freezer Cookies

  1. ½ cup organic peanut butter
  2. ½ cup raw honey
  3. ¼ cup chopped, dried organic figs
  4. ¼ cup chopped, raw almonds
  5. 1 ½ – 2 ½ cups old fashioned oats
  6. Pinch of sea salt

Melt the PB and honey on low heat until it’s melted. Stir in the figs and almonds. Now add the oats until you have a nice thick batter. Place on a wax paper lined cookie pan in tablespoon sized portions. Freeze for about 30 minutes.

This is a really flexible recipe…you can substitute any nut or dried fruit for the almonds and the figs…or use agave nectar if you’d like this to be a vegan recipe.

I’m so excited about tomorrow…we’re having a big slow-pitch tournament in our hometown! Every year our church forms a couple teams for the big tournament. It’s always such a fun day with lots of sunburns, competition, and friends…totally worthy of all the stories we end up with at the end of the day. That’s my workout for tomorrow!
