It’s all about the green veggies. Come on, I know you’ve heard it…over and over. Eat more salads. Drink green juice. Have you tried green smoothies? Eat your peas…all of them. Drop the cookie…eat a lettuce leaf instead.

Though, I’m not sure I will ever give up my now-and-then-cookie (especially if they are a healthy version!) in exchange for a head of Romaine, I’m all for the green goodness! The more the better. I used to be in the habit of green smoothies every morning and often, salads for lunch, and then another salad with dinner. I was the “Green Queen” and then, gradually, I just sort of fell away from it. I guess something I should get more “in the habit” with, but hey…I like the flexibility of having oatmeal or an egg on toast if I so feel like it. I always forced myself to eat healthy foods whether I wanted to or not…which I suppose is good, but I think you lose a lot of the pleasure of food too. Now I’m a lot more balanced…but I do know that I need more greens in my life. Besides, who wouldn’t want Popeye’s ripped arms?

Yesterday I made this for lunch and I loved it so much. I paired it with a small helping of pasta and it was just the perfect mid-day meal. I used barely any oil and just used spices for flavour, so it’s extremely low calorie. This serves 4.

Green Veggie Stirfry

  1. 3 baby zucchini
  2. 1-2 cups chopped cauliflower
  3. 1-2 cups chopped broccoli
  4. 1 medium onion
  5. 1 green pepper
  6. 4 cloves garlic (next time I’m adding more!)
  7. 1 scant tsp. cumin
  8. 1 splash of lime juice
  9. Olive oil, in spritzer
  10. Sprinklings of dried parsley
  11. A few good shakes of Thai seasoning (I doused everything in it and it was amazing!)

Chop all your veggies. Warm a cast iron skillet on medium heat. Lightly mist the skillet with olive oil. Add the veggies. Spritz lightly with olive oil, as it cooks.

Once or twice add a splash of water and steam the veggies by placing a lid on top for a few minutes. Add garlic. Then, once everything is cooked add the spices. This recipe is super simple…you don’t even have to listen these boring instructions. Use your own intuition. Add your veggies. Cook. Steam. Boil. Whatever…sprinkle on whatever sounds good to you. I know you’ll come up with something good.

Yesterday I went for my first run since the marathon. It was just a short, 3 miler, but it felt so good. I’m really looking forward to doing more strength training with some DVDs and books, not just running. I have this notion that I’d like to do a little ab work before bed…just a few crunches. Hey, it’s the small goals.

    Confession time – I do not eat nearly enough greens. But I’m trying! I make a tasty tofu stir fry with veggies, but this recipe with zucchini (I love zucchini) looks delicious! Going to have to try this one soon. :)

    Gorgeous, and so healthy! I love cumin, but I’ve never paired it with lime juice before– I’ll have to try it!

    Re: going crazy health-wise… I’d like to think I’m pretty balanced when it comes to food, although I do occasionally go a little “carb-crazy.” Can’t help it, when that homemade challah is baking it’s hard to resist!

    Looks like stir fries are in the in thing this summer! I’ve done 3 for dinner in the past 3 days. Yours looks simple, flavorful, and most importantly – fresh!

    Ran a marathon?! I’m lucky to lightly jog a lap around the soccer field with my dog. :) It’s amazing how many people on Foodbuzz are about healthy eating and exercise, and it motivates me to keep going!

    So, I made this recipe tonight (we go vegetarian on Sundays to end my week and to start his off on the right foot) but we made a few changes. I made my own thai spice blend from a recipe found here http://www.motherearthnews.com/Relish/Homemade-Thai-Seasoning-Blend-Recipe.aspx. Turns out, I’m a little heavy handed when it comes to pinching the spice to toss it in, so we weren’t sure what to do! I closed my eyes and threw in half a cup of crunchy peanut butter and it was GREAT!! We’ve decided to make this sometime later this week but with the addition of diced chicken breast and coconut milk to make it more like a Panang. Anyway, thank you so much for the recipe/inspiration! It was great! :)

    Ooh, this stir fry sounds yummy!
    I used to be a junk-food vegan when i was younger, but now i’m a stereo-typical health fiend vegan! Fruit, smoothies, or veggies on whole-grain toast at breakfast, veggie soup or salad at lunch, and soup or salad for dinner! I don’t cook with oil, sprinkle seeds on everything, – I even have salad at breakfast! And snacks are rice cakes or dried fruit. I don’t really eat chocolate, just the occasional raw chocolate. I drive me parents crazy as they never know what to buy me for treats etc. The one year, my mum made me a “Hannah-friendly birthday cake” – Which was a lettuce, cut in half with avacado in the middle, and a candle on top! Was so funny. I love cooking and experimenting to make oil-free healthy versions of things. Healthy cupcakes are my speciality! hehe x
