It’s funny how you go through seasons, where you are constantly craving a certain something.

For the last 8 weeks, I have been having a love affair with ice-cream. It’s always been a weakness of mine, but lately, I have been extra weak.

So yesterday, I made this.

I was determined to beat my cravings with a low carb, sugar free option. The heavens were opened and my heart is beyond happy. The incredible thing about this ice-cream is that it actually has a good amount of protein, as well as being completely sugar free and low carb. There’s nothing bad in this! You could have it for breakfast. I won’t judge. Serves 4 (or 3 large servings).

 Low Carb Blueberry Ice Cream

  1. 1/2 cup cottage cheese
  2. 1/2 cup almond milk, unsweetened
  3. 1 cup heavy whipping cream
  4. 1 cup blueberries
  5. 1/8 cup stevia syrup*
  6. 1 tsp. pure vanilla extract

Blend all the ingredients together until smooth. Add to ice-cream maker according to manufacturers instructions.

 *You can use any stevia based sweetener, just add according to taste. I used this NuNaturals simple syrup and I love it.

    My favorite ice cream changes all the time. When I was little, it was strawberry and then chocolate. Then, I was all about the decadent flavors like Butter Pecan, Rocky Road, Cookie Dough, Cherry Garcia and most of the Ben and Jerry’s flavors. As an adult, I like to experiment with more unusual flavors, such as green tea. In the end, I’ve found that vanilla is my fave when it is done just right. It’s got to have a pure vanilla bean flavor.
