Practically Calorie Free Spaghetti
In the last couple months I’ve started trying those trendy, “calorie free” noodles…and I have to say I really like them. I remember hearing about them years ago and it was hard to find places that sold them. I guess I wasn’t looking the right places, because it’s not that hard to find…you just go to an Asian market/store, a health food shop, or an International supermarket.
They’re not the cheapest thing in the world, but if you get them at an international stores (rather than a health food store), they’re not too pricey.
What they actually are: They come from the root of an Asian plant called konjac…they’re mostly made up of water and glucomannan, a water-soluble dietary fiber. By themselves they have little flavor of their own. They’re usually packaged in a water filled container, which you will drain and rinse before cooking.
Why I like them:
- NO calories! (What?!)
- NO fat
- NO carbs (like maybe 1g!)
- Taste pretty good – a great vehicle for flavour
Things I don’t like as much:
- Texture – If you’re expecting it to be like cooked noodles, you’re in for a disappointment…the texture if more chewy
- Usually a little more pricey – I think I’m going to consider buying a box of it on Amazon to stalk up instead of buying one little container at a time
I made this faux pasta a little while ago and I really enjoyed it. The whole thing couldn’t have been many calories, yet I felt really full after a big plate of this.
I’m not sure this is really a recipe – it’s just too simple…but that’s why I like it. After getting home from a long day of classes, this was the best dinner!
All you have to do is boil the yam noodles until hot (after draining and rinsing with cold water). The noodles actually don’t really take any cooking time (more like heating time).
Or you could heat up your pasta sauce and warm your noodles in that at the same time. That way, they can soak up some of that flavour.
For my pasta, I used tomato sauce (super low calorie) with the addition of some organic, lean ground beef (seasoned with Montreal steak spice). Honestly, can you get simpler than that? Next time, I’m adding mushrooms and veggies galore – when I’m not in such a hurry.

I really like the noodles! I found that if you marinate them in vinegar or lemon juice, the texture improves too.
I’ve had kelp noodles and have heard of the soy ones. I’ve never seen these, though.

I had no idea there was such a thing as calorie free noodles. I am going to give them a try.
I really love these most in dishes that I’d use rice noodles…it’s a more similar texture, and the flavors of Asian dishes really pop with the konjac noodles. VERY yummy!
