Satisfying Granola

I’m not usually excited about Mondays…but last week I was thinking about Colourful Palate and my heart was filled with happy. Honestly, there are perks to recovering from my accident. I have more time. Also, I’m getting to the point where I can do a lot more, which is so encouraging. Therefore and forthwith, I’m going to blog more consistently.

So I’m celebrating this Monday with a new favourite breakfast.

This is a very flexible, fool proof recipe. Whether you’re paleo, raw food fanatic, vegan, allergic to dairy or gluten, a low carber, a THM fan, or just like delicious granola, you can make this with just a couple “tweeks”. I prefer to eat lower carb, low sugar foods…so if you’re like me, it’s very easy to swap out ingredients.

  1. 1 cup shredded unsweetened coconut
  2. 1 cup dried berries*
  3. 1 cup raw cashews
  4. 1 cup raw sunflower seeds
  5. 1 cup pumpkin seeds
  6. 2 cups walnuts
  7. 2 cups pecans or slivered almonds
  8. 1/2 cup sesame seeds, poppy seeds, and chia seeds
  9. 1-2 cups quick oats**
  10. 3/4 cup coconut oil
  11. 1 cup organic honey***
  12. 1 tbsp. vanilla
  13. 1/2 tsp. sea salt

*Freeze-dried strawberries are another delicious low carb/low sugar option…if you don’t care or are pinching pennies…use craisins or raisins

**If you’re following the THM diet, this can still make it an S meal because the final servings are small – If you want to have larger servings leave the oatmeal out

*** If you’re making this no-sugar, make sure to add the equivalent of 3/4 cup of sweetener. I love using NuNaturals stevia. Honestly, just add sweetener to taste! You know what you like!

Mix everything except oil, sweetener, vanilla and salt, altogether in a large bowl.

Melt coconut oil with honey. Add vanilla and sea salt. Pour over the granola, and mix well.

Bake in a shallow pan on parchment paper for several hours at 125 degrees. Stir every hour to get it browned evenly. You can also dehydrate it on low overnight on spread sheets (raw option). Serve with nut milk.
