Breakfast for school

So, at this point in my life, I’m feeling guilty for being so absent in the blog world. I hate excuses, but honestly, I’ve barely been at home to even answer my own family’s emails (sorry Mom! I’m coming!). It’s exam week at college and between that, studying, and all the other stuff I’m into…this blog has taken a bit of a back seat.

Here’s a look into my life lately…

School. All day. Every day. Homework. We don’t need pictures of all that today. Nope.

How about some eats?

Eat clean and drink water

Now that I’m living on my own (well, I have an awesome gal I room with too), I love cooking for myself. However, I’m always on the go, so my meals are very simple. Honestly, the baked sweet potato with coconut oil (maybe some chicken) is as fancy as I feel lately. Besides that, I’m eating lots of veggies, fruit, eggs, and yogurt. It’s just easy and right now, that’s what I’m all about.

Oh, and since we’re still talking about food…have I mentioned to you how obsessed I am with protein pancakes? Every other day I have them…they make me very happy…I can almost feel little angels dancing on my tastebuds.

Got your greens

Something I’m struggling with, is getting all my greens in. To fix this, I’m adding kale to things (soup, fried, raw) and adding a baggy of greens to my packed lunch. To make up the difference, I take my lovely spirulina every day.

Sisters

In other non-food news, my sister is off to somewhere in South America working with children who needs lots of love in care. I’m so proud of her in this great new venture, but I’m not going to lie…I miss her! We’re really close, but I know this is where she’s supposed to be right now, so I’m happy for her too.

    Thanks for the reminder that we should still eat healthy when we’re busy. BTW the way I recently discovered bagged shaved Brussels sprouts at Trader Joe’s, so I bought a bag and am using them in salads, wraps, soups, and stir-fries. Good way to increase the greens!

    Don’t feel guilty. Your life outside of the Blogosphere comes first. Glad to hear you are doing well. I’ll keep your sister in my prayers while she is away. She’s an amazing individual, much like you.
