Portabella Pizzas

Portabella Mushroom Pizzas

This recipe is for my fellow “hobbit” friends. And when I say hobbit, I don’t imply that I’m short and only think short people should eat this. Or that you have hairy feet.

These mini pizzas feature the most esteemed Portabella mushroom…and hobbits love mushrooms.

Hobbit Problems

It’s a great way to stack up your veggie intake and get in more B vitamins and minerals into your day. Plus, one mushroom cap is like 35 calories! Serves 2.

Portabella Pizza

  1. 4 Portabella mushroom caps
  2. Organic tomato sauce
  3. Pesto
  4. Organic spinach
  5. Chicken breast (or any other meat)
  6. Grated cheese

Take the stems out of the mushrooms and gently scrape some of the inside of the mushroom out…so you have room to load your “pizza shell” with goodness.

Top with light pesto and tomato sauce, load with whatever veggies you like…protein and cheese…you get the idea. Bake for about 10-12 minutes at 450 degrees.

Low Calorie and Low Carb Pizzas

This recipe is a basic framework, but essentially you can do whatever you like. Vegetarian? Skip the meat? Vegan? Use a dairy-free cheese.

Tried Portabella mushrooms before? What do you use them for?

Chia Seed Superfood Granola 01

I’ve been looking for a low calorie, low sugar granola. Turns out those are hard to find.

You know what they say, if you want something done right you need to do it yourself.

Well, ok…maybe that’s not entirely true. I did find one brand that I loved, but it was a bit pricey for me to buy regularly. I decided to make it myself. Turns out it was ridiculously easy.

No baking. No crazy ingredients.

Just stirring all that superfood goodness.

Chia Superfood Granola Ingredients

Chia Superfood Granola

  1. 1/2 cup organic buckwheat grouts
  2. 1/4 cup dried cranberries
  3. 1/4 cup chia seeds
  4. 1/4 cup sliced almonds
  5. 1/4 cup hemp hearts

Nutritional Info (per 2 tbsp):  Calories: 70, Fat: 3.5g, Carbs: 8g, Fibre: 2.5g, Protein: 3g

Is it ridiculous to just say that the instructions are…like…just mix.

Chia Seed Superfood Granola Mix

Well, that was hard.

Chia Seed Superfood Granola 02

Just kidding.

So to eat this divine bunch of love…you take 2 tbsp. of cereal and mix it with about 1/2 cup of almond milk  and let it sit a couple minutes.

Sounds meager, but the chia seeds expand and make it into a delicious, wholesome breakfast. And you can always have second helpings!

Chia seed fan, yay or nay?

Starbucks Passion Tea Lemonade Recipe

When I’m not in the coffee mood (which is rare), I love trying some of the cold tea beverages at Starbucks. For those of you who haven’t tried it, there’s this delicious passion fruit tea they make with lemonade and syrups. It’s amazing, BUT there’s way too much sugar in there!

I decided to make it my way…and not only did it have an almost identical flavour, there are NO calories, NO carbs, and not Continue reading »

The secret to indulging my “I want pasta” mood…is the most honoured spaghetti squash. It’s the most magical vegetable in my universe. It also needs to be smothered in cheese. Because.

And no, I don’t need a real reason. Cheese doesn’t need a reason. Ever Continue reading »

It’s high time we have another spirulina recipe again.

Those of you have who followed my blog for a while will know that this green stuff rocks my little world. Why is that, you say…

Well, here are some reasons it’s good for you, but I noticed a huge difference with my hormonal imbalances, energy, and even my skin! Really, I also just like it because it’s a fabulous mufti-vitamin loaded with minerals/antioxidants and I feel like it just covers me in the robe of nutritious righteousness. My favourite brand in the entire world is from Nutrex Hawaii…just thought you should know that. You can also now go buy it…because you will Love. How. It. Makes. You. Feel.

Anyway, I tried something new and decided you should try it.

Guacamole just got holy.

Well, not really…I just said that because it rhymed…but it definitely becomes like an extra, extra, extra superfood. Angelic really.

The Healthiest Guacamole Recipe in the World

Spirulina Guacamole

  1. 1 avocado
  2. 1 Roma tomato, chopped
  3. 1 large handful cilantro, chopped
  4. 1/2 lemon, juiced
  5. 1-2 tbsp. spirulina*
  6. 1/4 tsp. sea salt

*Depending on how much you “like” the taste of spirulina

Mash the avocado and then mix everything together. Done. The end.

So while you can have this with crackers of flax chips…I really just like eating it with leaves of Romaine lettuce. The. Best.
