I was excited to use them, so I dreamed up this recipe. I wanted it to be low in fat, high in fiber, slightly sweet<!--more--> (since dried fruits are already so sweet), and have a fruity flare to it. I really like how it turned out, it\u2019s not a super crispy, chew-and-chew-and-chew, type granola (although I like those kinds too), because the applesauce (a great substitute for oil) keeps it from getting too crunchy.<\/p>\n<p>Store bought granola is not only super duper high in calories, it\u2019s high in fat (not your good fats!), and it costs a lot\u2026I\u2019d much rather make my own healthy version!<\/p>\n<p>This is oil free, and sugar free, and if you want it to be vegan simply swap out the honey for more agave nectar. For gluten free, make sure your rolled oats say \u201cGluten Free\u201d on the packaging. To me, all that adds up to great breakfast\u2026with a little added protein, of course! Eat this with Greek Yogurt to get a good bang of protein to start the day.<\/p>\n<h2 class=\"recipeTitle\">Tropical Granola<\/h2>\n<ol class=\"recipe\">\n<li>6 cups rolled oats (gluten free)<\/li>\n<li>\u00be cup organic coconut flakes<\/li>\n<li>\u00be tsp. sea salt<\/li>\n<li>1 tsp. cinnamon<\/li>\n<li>1\/3 cup raw macadamia nuts<\/li>\n<li>1\/3 cup honey<\/li>\n<li>1\/3 cup agave<\/li>\n<li>2 tsp. pure vanilla<\/li>\n<li>1 \u00bc cup unsweetened applesauce<\/li>\n<li>1\/3 cup chopped organic, dried papaya<\/li>\n<li>1\/3 cup chopped organic, dried figs<\/li>\n<li>1\/3 cup chopped, organic mango<\/li>\n<\/ol>\n<p>Preheat oven to 350 degrees. Mix up the dry ingredients (oats, coconut, spices, and nuts). Add all the wet ingredients to a medium sized bowl and combine. Pour the granola mixture onto the sheet and place in the oven for about 30 minutes. Because every oven is different, keep checking on the granola to make sure it doesn\u2019t burn. At the 30 minute mark, turn over the granola and keep baking until it\u2019s a golden brown. Actually, we all did. Nice to know that I\u2019m not the only one who doesn\u2019t have patience for it to cool. You know\u2026not raining! It\u2019s been so great to see our square foot garden growing, work outside, and enjoy the sun on my face. But somehow, summer always tends to be the busiest time of year for our family and the band\u2026so it\u2019s always a bit of a struggle to fit my workout in. But I find that if I get up early, I can squeeze it in. It seems like if I wait till the afternoon, there\u2019s just no time for it anymore.
