I\u2019m kind of excited. Not only do they have magnificent sushi, but yam fries, shrimp\u2026and be still my heart\u2026bubble tea. Yah. Next shopping trip I know where I\u2019m having lunch, hungry or not.<!--more--><\/p>\n<p>So I\u2019ve been thinking about sushi and those thoughts have driven me to a lunch of a homemade version. It was really fun to make\u2026I can\u2019t wait to make other varieties of sushi now that I know I can do it. There are soooo many ways to do sushi, by adding different strips of veggies, adding a protein like tuna or imitation crab, stuffing in some avocado (we were out! Sniff), or by using different condiments. I like the itty bittiest amount of that green wasabi paste and pickled ginger on mine. Lots of pickled ginger. The way I make it means there\u2019s no fat, sugars, or cholesterol.<\/p>\n<p>But here\u2019s the recipe I did today\u2026hope you enjoy!<\/p>\n<h2 class=\"recipeTitle\">Basic Vegan Sushi<\/h2>\n<ol class=\"recipe\">\n<li>1\/3 cup cooked Japanese sushi rice (or sticky rice)<\/li>\n<li>1 sheet roasted seaweed<\/li>\n<li>Rice vinegar<\/li>\n<li>Bragg\u2019s soy sauce<\/li>\n<li>Some julienned carrot<\/li>\n<li>A couple strips of cucumber<\/li>\n<li>A little bit of pickled ginger<\/li>\n<li>1-3 small, marinated mushrooms<\/li>\n<li>1 tsp. toasted sesame seeds (you just need a couple sprinkles)<\/li>\n<\/ol>\n<p>First of all, cook your rice. You can cook it like normal rice but the ratio is 1 cup of rice to 1 \u00bc cup of water.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-572\" title=\"Vegan Sushie 01\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2011\/04\/Vegan-Sushie-01-510x375.jpg\" alt=\"Vegan Sushie 01\" width=\"510\" height=\"375\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2011\/04\/Vegan-Sushie-01-510x375.jpg 510w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2011\/04\/Vegan-Sushie-01-1024x754.jpg 1024w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2011\/04\/Vegan-Sushie-01.jpg 1466w\" sizes=\"(max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>Get out a bamboo sushi mat and place the seaweed (shiny side down) on the mat. Spoon about 1\/3 cup of rice onto the seaweed and pat it down with wet fingers. Hold the edge of the mat with your thumbs, then lift the seaweed and roll the sushi away from you. To up the nutrition I\u2019d like to make it with brown rice, but brown rice isn\u2019t that sticky, so I\u2019m not sure if it would work. Nonetheless, I can\u2019t wait to make sushi again!
