You know, in keeping with the whole Valentine&#8217;s Day thing. However, this other recipe came into my mind and kept pushing chocolate off to the side<!--more-->.<\/p>\n<p>Raspberries won over the chocolate. I&#8217;m not looking back.<\/p>\n<p>This pancake is completely sugar and pretty much carb free&#8230;it tastes like dessert, but it&#8217;s high in protein. The only thing I may regret is not having whipping cream in my fridge. That would&#8217;ve taken it to a whole new level.<\/p>\n<p>This would be the breakfast in bed of my choosing, preferably with Thor delivering it in person. Well, a girl can dream.<\/p>\n<p>I digress. Just eat this.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-5551\" alt=\"Low Carb Cheesecake Pancake\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2015\/02\/Low-Carb-Cheesecake-Pancake-510x340.jpg\" width=\"510\" height=\"340\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2015\/02\/Low-Carb-Cheesecake-Pancake-510x340.jpg 510w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2015\/02\/Low-Carb-Cheesecake-Pancake-1024x682.jpg 1024w\" sizes=\"(max-width: 510px) 100vw, 510px\" \/><\/p>\n<h2 class=\"recipeTitle\">Low Carb Raspberry Cheesecake Pancake<\/h2>\n<ol class=\"recipe\">\n<li>2 organic eggs<\/li>\n<li>3 ounces cream cheese, softened*<\/li>\n<li>1 tbsp. plain, thick yogurt<\/li>\n<li>1\/4 cup raspberries<\/li>\n<li>1 packet Truvia**<\/li>\n<li>A few drops of vanilla<\/li>\n<li>Pinch of pink sea salt<\/li>\n<\/ol>\n<p><em>*You can just heat it in the microwave for 30 seconds so it stirs easily into the eggs.<\/em><\/p>\n<p><em>**I also use NuNaturals no carb <a title=\"NuStevia\" href=\"http:\/\/amzn.to\/1ycKVJ4\" target=\"_blank\">NuStevia<\/a>, just a couple tiny shakes! This stuff lasts forever!\u00a0\u00a0<\/em><\/p>\n<p><em>\u00a0<\/em>Stir all the ingredients together in a bowl. Pour half the batter into a pre-heated non-stick pan (with a little butter or coconut oil added to the pan). Cook until each side is done. Cook the other half of the batter. Makes 1 thick pancake or 2 thinner crepe-like pancakes.<\/p>\n<p>This whole recipe is under ten carbs! Unless you make it a full out logger&#8217;s breakfast and add some swirly toast.
