Except for the Starbucks pumpkin spice late. I\u2019ll take homemade any<!--more--> day\u2026but I\u2019m gonna be the one making it. #notafan<\/p>\n<p>It\u2019s also the season of the most beloved spaghetti squash. My solution is using the aforementioned squash as substitute.<\/p>\n<p>What really happens when you do this\u2026you go crazy with your veggie intake! Good for you\u2026getting all those veggies in your life!<\/p>\n<p>This serves 4-5.<\/p>\n<h2 class=\"recipeTitle\">Spaghetti \u00a0Marinara Bake<\/h2>\n<ol class=\"recipe\">\n<li>1 good sized spaghetti squash, cooked*<\/li>\n<li>2 heaping handfuls of spinach, chopped lightly<\/li>\n<li>1 cup tomato pasta sauce<\/li>\n<li>1-2 tsp. garlic puree<\/li>\n<li>1 tsp. sea salt<\/li>\n<li>Black pepper, to taste<\/li>\n<li>2 dozen mini meatballs, cooked<\/li>\n<li>1 \u00bd cups mozzarella cheese, grated<\/li>\n<\/ol>\n<p><i>*Good sized means a fat medium sized. Or so I have decided. I literally measured it\u2026and if this helps you figure out the size\u2026.it was a 9\u201dx4\u201d size squash. And yes, I\u2019m aware that\u2019s now how you tell people how to pick a squash.<\/i><\/p>\n<p>To oversimplify the directions, basically mix everything together in a bowl, except the cheese and the meatballs.<\/p>\n<p>Add to a greased square pan and cook for 30 minutes (at 450 degrees). At the 30 minute mark, add the cooked meatballs (also something I did beforehand) on top of the casserole in a row, top with cheese, and finish baking for 10-15 minutes. I then bake them at 375 degrees for 15 minutes. Then flip and bake the squash upside down for 30 more minutes in the oven.
