She\u2019s a genius at creating delicious-ness out of things like\u2026dandelion greens. Once I first tasted her recipe for dandelion pesto, I asked her if I could share the goodness with you.<\/p>\n<p>I\u2019ve only had dandelion greens in smoothies and juices<!--more-->\u2026so I love this recipe to get dandelions in the diet without drinking it. My roomie is a recipe genius and a yoga nut, so you might want to follow her for inspiration on <a title=\"Diane Jmaeff\" href=\"http:\/\/instagram.com\/dianejmaeff\" target=\"_blank\">Instagram<\/a>&#8230;you probably want to <a title=\"Colourful Palate on Instagram\" href=\"http:\/\/instagram.com\/colourfulpalate#\" target=\"_blank\">follow me there<\/a> too. Yes, you do.<\/p>\n<p>Dandelions are an amazing superfood \u2013 loaded with calcium, iron, antioxidants, vitamin A, beta carotene, vitamin C, minerals, and cancer fighting properties. It even has protein (made up of 14%)!<\/p>\n<p>You\u2019d think with so much dandelion in the recipe it\u2019d be bitter, but it\u2019s really delicious. Peel the lemon rind, leaving the white pith\u2026or simply make it easier by squeezing the lemon and using the juice.<\/p>\n<p>Blend everything together in a high-speed blender.
