A lot. However, I\u2019m not a fan of the high carb\/high gluten properties of those ridiculously good noodles. After my recent <a title=\"Luca Manfe Interview\" href=\"https:\/\/www.colourfulpalate.com\/2013\/07\/15\/colourful-people-master-chef-contestant-luca-manfe\/\" target=\"_blank\">post with the Italian MasterChef contestant<\/a> Luca, I had a large craving for a big bowlful of pasta. I think his Italian accent made me hungry\u2026<\/p>\n<p>However, I notice that high carb\/sugar foods seem to affect my body more negatively than higher caloric foods. This doesn\u2019t mean I skip out on pasta<\/p>\n<p><!--more--><\/p>\n<p>\u2013 I just don\u2019t have it very often\u2026especially since our home is a mostly gluten-free house.<\/p>\n<p>I decided to try a lower carb version by using spinach fettuccine <a title=\"Quest Noodles\" href=\"http:\/\/www.questproteinbar.com\/store\/pc\/viewCategories.asp?idCategory=15\" target=\"_blank\">\u201cnoodles\u201d from Quest<\/a>. For those of you who haven\u2019t tried these low carb\/low calorie noodles (<a title=\"What are low carb noodles?\" href=\"https:\/\/www.colourfulpalate.com\/2013\/05\/06\/practically-calorie-free-spaghettie\/\" target=\"_blank\">learn about them here<\/a>), you will probably won&#8217;t be crazy won over by the texture. However, I\u2019m learning to like them \u2013 the realization that I\u2019m only eating 10-20 calories of low-carb \u201cnoodles\u201d per serving is part of what makes me like them so much. Seriously though, they are a good vehicle for all sorts of magical flavours you drown them in. I have to say that I\u2019m more of a fan of the thinner spaghetti style \u201cnoodles\u201d than the thicker fettuccine style.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-4645\" alt=\"Quest Low Carb Noodles\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2013\/07\/Quest-Low-Carb-Noodles-510x340.jpg\" width=\"510\" height=\"340\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2013\/07\/Quest-Low-Carb-Noodles-510x340.jpg 510w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2013\/07\/Quest-Low-Carb-Noodles-1024x682.jpg 1024w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2013\/07\/Quest-Low-Carb-Noodles.jpg 1620w\" sizes=\"(max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>Here\u2019s a hint: Don\u2019t get put off by the smell when you open the bag of noodles. Just rinse those noodles like crazy and it goes away. The more you rinse the better it is!<\/p>\n<p>With this low calorie white sauce recipe, make sure you use unsweetened PLAIN almond milk (I like the stuff by <a title=\"Blue Diamond Almond Milk\" href=\"http:\/\/amzn.to\/135Dgwj\" target=\"_blank\">Blue Diamond<\/a>). If you use vanilla flavoured or any of those new milks that are a mix of coconut and hempseed, or whatever\u2026it\u2019ll have a different taste. USE PLAIN.<\/p>\n<p>You don\u2019t have to use <a title=\"glucomannan\" href=\"http:\/\/amzn.to\/15kvods\" target=\"_blank\">glucomannan<\/a> for a thickener, it\u2019s just my new thickener I\u2019m experimenting with. Cornstarch will work fine, just note that you want 1 tablespoon per 1 cup of liquid you\u2019re thickening. Make sure to mix it in cold milk or else it will not mix properly.<\/p>\n<p>I added chunks of chicken breast for some protein, but if you\u2019re vegetarian that\u2019s completely optional. Also, if you\u2019re not crazy about garlic just reduce it by one clove. Low Carb Pasta with Garlic White\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2013\/07\/Eat-Pasta-again-Low-Carb-Pasta-with-Garlic-White-510x365.jpg\" width=\"510\" height=\"365\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2013\/07\/Eat-Pasta-again-Low-Carb-Pasta-with-Garlic-White-510x365.jpg 510w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2013\/07\/Eat-Pasta-again-Low-Carb-Pasta-with-Garlic-White-1024x734.jpg 1024w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2013\/07\/Eat-Pasta-again-Low-Carb-Pasta-with-Garlic-White.jpg 1505w\" sizes=\"(max-width: 510px) 100vw, 510px\" \/><\/p>\n<h2 class=\"recipeTitle\">Low Carb \u201cPasta\u201d with Garlic White Sauce<\/h2>\n<ol class=\"recipe\">\n<li>1 cup plain, unsweetened almond milk<\/li>\n<li>1\/2 tsp. glucomannan*<\/li>\n<li>1\/3 cup skim milk mozzarella cheese<\/li>\n<li>2 tbsp. parmesan cheese<\/li>\n<li>2 cloves garlic, pressed<\/li>\n<li>Sea salt and freshly ground pepper, to taste<\/li>\n<li>1\/3 cup cooked chicken, chopped (opt)<\/li>\n<li>1 package of low carb noodles<\/li>\n<\/ol>\n<p><em>*Or use cornstarch \u2013 instructions above<\/em><\/p>\n<p>On medium heat, whisk in glucomannan into almond milk until blended. Add the cheese, garlic, salt, and pepper. The salt and pepper are what make the flavour pop\u2026so don\u2019t skimp! Heat until just starting to boil, continually stirring. Set aside on low while you tend to the noodles.<\/p>\n<p>Rinse, rinse, and rinse those noodles! Flash boil the noodles for 2 minutes or put in the microwave for 1 minute. Set on plate and top with sauce and a sprig of rosemary (because we\u2019re artsy like that).
