Whenever we go to a certain restaurant he always orders this fluffy omelet stuffed with juicy fruit and whipped cream. Always.<!--more--><\/p>\n<p>So thanks Dad for inspiring this tempting and delicious egg dish. It\u2019s great because it\u2019s loaded with protein, healthy fats, and is very low in carbs. Whether you want to have it for a filling supper meal or have it for an indulgent Saturday morning brunch, I can guarantee you\u2019ll love it! Serves 1-2.<\/p>\n<h2 class=\"recipeTitle\">Decadent Fruit Omelet<\/h2>\n<ol class=\"recipe\">\n<li>3 organic eggs<\/li>\n<li>1 tablespoon water<\/li>\n<li>1\/2 banana, cut into coins<\/li>\n<li>1\/3 cup mixed berries<\/li>\n<li>1\/4 peach, sliced<\/li>\n<li>1\/8 cup fresh pineapple, chopped<\/li>\n<li>Freshly whipped cream (sweetened with a little stevia)<\/li>\n<\/ol>\n<p>Whisk the eggs and water until they are completely blended. Mist a non-stick pan with olive oil and cook. Once it&#8217;s done on the one side, flip carefully and cook the other side.<\/p>\n<p>Fill half the omelet with whipped cream and the fruit. Fold over.
