It\u2019s still warm out, but it cools down quickly and the evenings get darker earlier. Cool, dark evenings are a wonderful time to catch up with the family, get some blogging done, and if there\u2019s time, some reading. So cozy.<!--more--><\/p>\n<p>This season of the year is nice too, because this is when we start harvesting a lot of our garden. Lately we\u2019ve been enjoying a lot of our organic goodies like squash, zucchini, onions, swiss chard, beets, carrots, peppers, tomatoes, and cucumbers. While all the vegetables are producing incredible yield (thanks to <a title=\"Square Foot Gardening\" href=\"https:\/\/www.colourfulpalate.com\/2011\/07\/16\/square-foot-gardening\/\" target=\"_blank\">our square foot garden<\/a>), I feel like we have cucumbers coming out of our ears right now! Which is great because I LOVE cucumbers!<\/p>\n<p>We\u2019ve been adding them to garden salads, slicing them for snacks, making giant cucumber salads, <a title=\"Flavoured Water Recipes\" href=\"https:\/\/www.colourfulpalate.com\/2012\/08\/10\/my-spa-water-obsession\/\" target=\"_blank\">adding them to our water<\/a>, and today \u2013 juicing them. They are a diuretic, which helps reduce water retention. Cucumbers contain an enzyme called erepsin which helps digest proteins and supports healthy kidneys. A lot of their nutrition is actually in their skin, which contains silicon and chlorophyll (which help with healthy hair, nails, and skin). Not only that, but cucumbers are ridiculously low in calories, very alkaline, high in energy, and extremely hydrating.<\/p>\n<p>When you buy cucumbers you\u2019ll notice that they are often very shiny. If they\u2019re not organic, it\u2019s a sign that they\u2019ve been waxed, so you\u2019ll want to peel them before eating &#8211; or else, just buy organic and skip the peeling and get all those extra nutrients!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-3510\" title=\"Super Hydration Juice 04\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/09\/Super-Hydration-Juice-04-384x600.jpg\" alt=\"Super Hydration Juice 04\" width=\"384\" height=\"600\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/09\/Super-Hydration-Juice-04-384x600.jpg 384w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/09\/Super-Hydration-Juice-04.jpg 692w\" sizes=\"(max-width: 384px) 100vw, 384px\" \/><\/p>\n<p>(<em>I love the colour &#8211; so pretty!<\/em>)<\/p>\n<p>Here\u2019s a juice I had for lunch the other day, it\u2019s so refreshing and was just the thing before I did a workout. Serves 2.<\/p>\n<h2 class=\"recipeTitle\">Super Hydration Juice<\/h2>\n<ol class=\"recipe\">\n<li>2-3 organic cucumbers, large<\/li>\n<li>2 organic apples<\/li>\n<li>1\/4 organic beet or a handful of organic strawberries (opt)*<\/li>\n<li>Organic mint, to taste<\/li>\n<\/ol>\n<p>*The beet I added just added a pretty colour \u2013 so this is totally optional!<\/p>\n<p>Juice everything together in your juicer. Pour into two glasses with ice. Add a couple sprigs of mint for a garnish.
