Being a mom myself, I know I\u2019d like one of these for my special day, especially if my little ones lend a hand in making it.<!--more--><\/p>\n<p>Oh, and let me introduce myself. I\u2019m Shannonmarie of <a title=\"Rawdorable\" href=\"http:\/\/www.rawdorable.blogspot.ca\/\" target=\"_blank\">Rawdorable<\/a>. I\u2019ve been a blogging friend of Charissa\u2019s for years now, so you can imagine my reaction when she asked me to do a guest post. Since then, both of our eating habits and blogs have evolved, but still include some raw vegan recipes. For instance, I tend to post high raw vegan cupcakes, which I now refer to as Rawdorable cupcakes, as I don\u2019t want to stress out over each and every ingredient or scare away anyone unfamiliar with my unbaked goods.<\/p>\n<p>Charissa actually suggested I make a cupcake for this post, so I opted to create one for her, inspired by her scrumptious (my favorite word) breakfast recipes: <a href=\"https:\/\/www.colourfulpalate.com\/2012\/04\/12\/chocolate-banana-protein-pancake-review\/\" target=\"_blank\">Chocolate Banana Protein Pancake<\/a> and <a href=\"https:\/\/www.colourfulpalate.com\/2012\/02\/11\/heart-protein-pancakes\/\" target=\"_blank\">Heart Protein Pancakes<\/a> (protein-packed recipes, similar to these, help me keep my girlish figure, even after having two kids). Here\u2019s my version in Rawdorable cupcake form &#8211; <em>This makes one protein-packed Rawdorable cupcake, just right for Mom!<\/em><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-2329\" title=\"05-02-12topofchochimppropancakecupcake\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12topofchochimppropancakecupcake-510x411.jpg\" alt=\"05-02-12topofchochimppropancakecupcake\" width=\"510\" height=\"411\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12topofchochimppropancakecupcake-510x411.jpg 510w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12topofchochimppropancakecupcake-1024x826.jpg 1024w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12topofchochimppropancakecupcake.jpg 1338w\" sizes=\"(max-width: 510px) 100vw, 510px\" \/><\/p>\n<h2 class=\"recipeTitle\">\u00a0Chocolate Chimp Protein Cupcake<\/h2>\n<ol class=\"recipe\">\n<li>\u00bc cup cashews<\/li>\n<li>\u00bc cup oats<\/li>\n<li>1 Tbsp. <a href=\"http:\/\/www.sunwarrior.com\/product-info\/classic-protein\/\" target=\"_blank\">Sunwarrior Protein Powder in natural flavor<\/a> (or other plain rice protein powder)<\/li>\n<li>1 Tbsp. ripe mashed banana<\/li>\n<li>1 Tbsp. date paste (dates soaked overnight and blended into a paste)<\/li>\n<li>\u00bd tsp. pure vanilla extract<\/li>\n<li>\u00bd tsp. pure maple syrup (optional, or flavor with maple extract and stevia)<\/li>\n<li>Sprinkling of cinnamon, to taste<\/li>\n<li>dash of sea salt<\/li>\n<li>1 Tbsp. chocolate chips<\/li>\n<li>(opt) heart-shaped strawberry slice for garnish<\/li>\n<li>(opt) whipped coconut milk \u201ccream\u201d or canned whipped cream*\u00a0<em> <\/em><\/li>\n<\/ol>\n<p><em>*<a title=\"Soyatoo Whipped Creams\" href=\"http:\/\/amzn.to\/RroryK\" target=\"_blank\">(Soyatoo makes soy- and rice based vegan canned whipped creams<\/a>) for that extra special touch<\/em><\/p>\n<p><em> <\/em><em> <\/em>In a mini food processor or blender, grind the cashews, oats and protein powder into a flour-like consistency, and transfer the &#8220;flour&#8221; to a bowl.<\/p>\n<p>Next, add the mashed banana, date paste, vanilla, maple syrup, cinnamon and sea salt. Whisk to combine (a whisk helps keep the &#8220;batter&#8221; fluffier). The batter should be moist, but not so damp that it requires &#8220;baking&#8221; in a dehydrator (although you could if you desire).<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-2330\" title=\"05-02-12mixingchoccippropancakecupcakebatter\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12mixingchoccippropancakecupcakebatter-451x600.jpg\" alt=\"05-02-12mixingchoccippropancakecupcakebatter\" width=\"451\" height=\"600\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12mixingchoccippropancakecupcakebatter-451x600.jpg 451w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12mixingchoccippropancakecupcakebatter.jpg 812w\" sizes=\"(max-width: 451px) 100vw, 451px\" \/><\/p>\n<p>Stir in the chocolate chips, and then form the batter into a cupcake shape, using a reusable silicone liner or small ramekin. Garnish the cupcake with a strawberry heart.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-2331\" title=\"05-02-12hearttoppedchocchimppropancakecupcake\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12hearttoppedchocchimppropancakecupcake-510x391.jpg\" alt=\"05-02-12hearttoppedchocchimppropancakecupcake\" width=\"510\" height=\"391\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12hearttoppedchocchimppropancakecupcake-510x391.jpg 510w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12hearttoppedchocchimppropancakecupcake-1024x785.jpg 1024w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/05-02-12hearttoppedchocchimppropancakecupcake.jpg 1408w\" sizes=\"(max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>For that extra special touch, you could also pipe\/dollop some whipped coconut milk &#8220;cream&#8221; (allow a can of coconut milk to set unshaken in the fridge until chilled and the &#8220;cream&#8221; has separated to the top. Remove the &#8220;cream&#8221; and whip to a fluffy consistency. This can be sweetened with a little pure maple syrup, to taste) or canned whipped cream of choice (this is quick and convenient for the kids to do. If you want to stick with the vegan theme, <a href=\"http:\/\/www.soyatoo.de\/us\/?home\" target=\"_blank\">Soyatoo makes soy- and rice-based canned whipped cream<\/a>) around the rim of the cupcake. Yum!<\/p>\n<p>Kids can actually help make this cupcake for mom\u2019s breakfast, as long as an adult supervises the food processor part. I know my son Jacob and daughter Hayden enjoy forming the \u201cbatter\u201d into cupcakes, cookies and such, and decorating them, too. We make pink berry popcorn with only three ingredients. Just air pop some plain organic popcorn, drizzle it with melted coconut oil and toss it in finely ground freeze-dried strawberries (the best way to do this is by shaking it around it a closed container; time to <a href=\"http:\/\/www.youtube.com\/watch?v=yycdxzGJ8rk\" target=\"_blank\">shake our sillies out<\/a>). The results are berrylicious for both moms and their kids.<\/p>\n<p>Happy Mother\u2019s Day!
