My name is Samantha and I\u2019m here guest posting for Charissa while she is off singing her heart out. I write at my blog, <a title=\"Sweet Rememdy\" href=\"http:\/\/www.sweet-remedy.com\/\" target=\"_blank\">Sweet Remedy<\/a> and was honored when Charissa asked me to come up with a post to share on Colourful Palate!<\/p>\n<p><!--more--><\/p>\n<p>First I\u2019m going to tell you a little bit about myself. I\u2019m a student living in the Hudson Valley of New York State. I\u2019m torn between studying nutrition\/dietetics or culinary. Maybe eventually I will do both and just become a professional student! I was a farmers\u2019 market vendor, which is where the name Sweet Remedy came from. I\u2019m really big on the slow, local and seasonal food movements. Right now, I\u2019m focusing on eating a balanced diet of fruits, vegetables, beans, nuts and whole grains. The first idea I thought of was a lettuce boat with beans and other veggies chopped up and stuffed inside.<\/p>\n<p>When I was shopping for the ingredients I realized that I needed to find romaine lettuce that would look like a boat. I couldn\u2019t find anything that was aesthetically pleasing to me. I finally stumbled upon endives and thought that they would be perfect.<\/p>\n<p>I didn\u2019t really know what I would be putting inside of them yet. In fact, I didn\u2019t know until that morning when I started to peel apart the endives! Luckily I had bought lots of vegetables since I just purchased a new juicer. I had many options to choose from for the filling of the endive leaves.<\/p>\n<p>These Spicy Black Bean Endive Boats are vegetarian friendly, made with mashed and flavorful black beans. I paired the beans with soothing cucumber chunks and a calming avocado dressing. I wanted to drizzle a cooling dressing on top because I knew I\u2019d be spicing up the beans and I wanted some balance. I used plain Greek yogurt and an avocado with some other appetizing flavors (lime &amp; fresh cilantro from my new and tiny herb garden!) This is a wonderful vegetarian appetizer. Makes 8-10.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-2296\" title=\"Spicy Black Bean Endive Boats 02\" src=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/Spicy-Black-Bean-Endive-Boats-02-400x600.jpg\" alt=\"Spicy Black Bean Endive Boats 02\" width=\"400\" height=\"600\" srcset=\"https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/Spicy-Black-Bean-Endive-Boats-02-400x600.jpg 400w, https:\/\/www.colourfulpalate.com\/wp-content\/uploads\/2012\/05\/Spicy-Black-Bean-Endive-Boats-02.jpeg 720w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/p>\n<h2 class=\"recipeTitle\">Spicy Black Bean Endive Boats<\/h2>\n<ol class=\"recipe\">\n<li>\u00bd of a large cucumber<\/li>\n<li>3-4 cherry tomatoes<\/li>\n<li>Cooking spray or 1 tsp olive oil<\/li>\n<li>\u00bd of a medium onion<\/li>\n<li>2\/3 cup black beans<\/li>\n<li>\u00bc tsp cayenne pepper<\/li>\n<li>\u00bc tsp cumin<\/li>\n<li>1 avocado<\/li>\n<li>6oz plain Greek yogurt<\/li>\n<li>1 tbsp chopped cilantro<\/li>\n<li>1 clove of garlic, minced<\/li>\n<li>1 lime<\/li>\n<li>3 Belgium endives<\/li>\n<\/ol>\n<p>Chop the cucumber and cherry tomatoes and mix together in a bowl, set aside.<\/p>\n<p>Spray a skillet with cooking spray or coat with about 1 tsp of olive oil.<\/p>\n<p>Chop the onion and add to the skillet. Turn the burner to medium heat, stir.<\/p>\n<p>Mash the black beans with a fork or other kitchen utensil. Add the black beans to the skillet and continue to stir.<\/p>\n<p>Add the cayenne pepper and the cumin to the black bean and onion mixture. Stir together for 2-4 minutes. Remove from heat and set aside.<\/p>\n<p>While the black bean and onion mixture cools, cut the avocado and scoop insides into a food processor or blender. Add the Greek yogurt, cilantro, minced garlic and the juice of the lime and process for 2 minutes. Turn off, scrape down the bowl of the food processor and pulse 2-4 more times or until mixture is combined.<\/p>\n<p><span style=\"text-decoration: underline;\">To assemble boats: <\/span><\/p>\n<p>Carefully peel the endives and place on a plate, face up. You will have extra endive leaves because usually the first few are unusable and the last few are too small, this is why you need 3.<\/p>\n<p>Add the black bean mixture and top with the chopped cucumbers and tomatoes. For the avocado cilantro lime dressing you can either spread it on top of the boats or pipe it on using a frosting piping bag or a plastic freezer bag.<\/p>\n<p>You will have extra dressing. I suggest using it as a vegetable dip or as a dressing for other salads.
