Hey guys! I can\u2019t believe Easter is just around the corner. Happy thought.<\/p>\n

Another happy thought\u2026only a couple more weeks of my courses and I\u2019ll be free! I am ridiculously excited about this. I\u2019m also excited about these little goodies\u2026<\/p>\n

These no-bake oat cookies have always been a family favourite and one of the first cookies I ever made as a child. I revised the recipe to make it healthier and turned them into cute bird\u2019s nest for Easter!<\/p>\n

Bird\u2019s Nest Cookies<\/h2>\n
    \n
  1. 1 cup organic sugar<\/li>\n
  2. \u00bc cup almond milk<\/li>\n
  3. \u00bc cup coconut oil<\/li>\n
  4. 1 tbsp. cocoa<\/li>\n
  5. \u00bc cup organic peanut butter<\/li>\n
  6. 2 cups quick oats<\/li>\n
  7. 1 cup unsweetened coconut<\/li>\n
  8. \u00bd tsp. pure vanilla<\/li>\n
  9. Small chocolate eggs<\/li>\n<\/ol>\n

    Mix the sugar, milk, oil, and cocoa together. Bring just to a boil, stirring constantly.<\/p>\n

    Remove from heat and stir in remaining ingredients.<\/p>\n

    Drop by spoonful onto wax paper. Let cool (they will harden as they cool). Make little indentations in each cookie and add 2-3 chocolate egg candies on top. Enjoy!<\/p>\n

    Floor Hockey<\/span><\/strong><\/p>\n

    As for the floor hockey tournament we had on Saturday, it went well\u2026it was awesome to just hang out with friends and play hard. Our team definitely did the best we\u2019ve done in the last 3 years, so that\u2019s something to be excited about. Accident prone me, turned both of my ankles in the game (yes, both of them) and now I have elephant ankles. Oh well, at least I played hard enough to earn them. Last year\u2019s floor hockey tournament had me in the ER because we thought I had cracked my ribs and I couldn\u2019t breathe. Anyway, it\u2019s stupid. Whenever I get hurt, it\u2019s because I did something silly like tripping. The ground I walk on hates me.<\/p>\n

    So no working out for me this week\u2026the thought is ridiculous anyway since I\u2019m barely tripping downstairs.<\/p>\n
