It\u2019s one of the best inventions God ever invented. Every time I see a Reese\u2019s peanut butter cup, I kind of die inside. They are so bad for you. Downright evil\u2026but they taste soooo good.<!--more-->I heard Jillian Michael\u2019s mention that Newman Owns Organics had a <a title=\"Healthy Peanut Butter Cups\" href=\"http:\/\/amzn.to\/OOftxl\" target=\"_blank\">\u201chealthier\u201d brand of peanut butter cups<\/a>. They\u2019re still not exactly a superfood. It\u2019s absolutely delicious and it only takes one piece to curb that raging sweet tooth. It&#8217;s also got some good fats in there with the coconut oil (check out this post: <a title=\"Why I Love Coconut Oil\" href=\"https:\/\/www.colourfulpalate.com\/2011\/12\/16\/why-i-love-coconut-oil-eggnog-protein-shake\/\" target=\"_blank\">Why I Love Coconut Oil<\/a>) and organic peanut butter!<\/p>\n<h2 class=\"recipeTitle\">Chocolate Peanut Butter Fudge<\/h2>\n<ol class=\"recipe\">\n<li>\u00bc cup organic coconut oil<\/li>\n<li>\u00bc cup organic peanut butter<\/li>\n<li>1\/3-1\/2 cup raw honey or agave nectar<\/li>\n<li>\u00bd cup pure cocoa<\/li>\n<li>1 tsp. pure vanilla<\/li>\n<\/ol>\n<p>Cream the coconut oil and peanut butter with a hand blender. Next, add the rest of the ingredients one by one and cream with the hand blender. Pour into an 8&#215;8-inch pan and freeze for an hour or two. It&#8217;s going pretty good. Yesterday did not include a smoothie, this morning I had a big green protein shake. I felt like I had a good amount of protein. Getting up earlier? Check. Did I get a workout before studying? Nope. As you\u2019ll read below, I hurt myself playing volleyball, so I need to take it easy so I can perform well for the next games(s). I\u2019m stretching and trying to get walks in.<\/p>\n<p>Yesterday\u2019s food journal:<\/p>\n<p><strong>Breakfast: <\/strong>1 organic hard-boiled egg, orange slices &amp; <a title=\"My Favourite Oatmeal\" href=\"https:\/\/www.colourfulpalate.com\/2011\/07\/29\/charissas-favourite-oatmeal\/\" target=\"_blank\">my favourite oatmeal<\/a><\/p>\n<p><strong>Lunch: <\/strong>1 sandwich w\/ lettuce &amp; carrots &amp; pickles, 1 <a title=\"Health Warrior Chia Bar\" href=\"http:\/\/amzn.to\/O9VojI\" target=\"_blank\">Health Warrior chia bar<\/a><\/p>\n<p><strong>Snack: <\/strong>frozen grapes, 3 small pickles, and raw almonds<\/p>\n<p><strong>Dinner: <\/strong>baked potato w\/ sour cream, salad w\/ <a title=\"Healthy Salad Dressing Recipes\" href=\"http:\/\/www.fabulousfoods.com\/articles\/949053\/healthy-salad-dressing-recipes\" target=\"_blank\">homemade dressing<\/a><\/p>\n<p><strong>Snack:<\/strong>1 piece of fudge (recipe above)<\/p>\n<p><strong><\/strong>The day before yesterday I did about 6 hours of volleyball and pulled some muscles\u2026so for the next two days after that I\u2019ve been keeping exercise pretty light in hopes that my muscles heal before tomorrow. Tomorrow is a volleyball tournament we\u2019ve been working up to for weeks. Once the whole thing is done and I\u2019m utterly exhausted from a day of that\u2026I rush off to the city with my family to run a \u201cMoonlight Race\u201d. Half of my family are doing the 6k while two of my brothers and I are running the 10k.<\/p>\n<p><em>The scary part:<\/em> I haven\u2019t run since last year. Not once.<\/p>\n<p>Not joking.<\/p>\n<p>I fully meant to train for the race and maybe even get a new PB. But nope, I totally forgot about the race. I\u2019ve been working out a ton and playing lots of volleyball, but I\u2019ve been focusing on strength and circuit training, not necessarily cardio.<\/p>\n<p>I like running, but not in the winter (unless on the treadmill and our treadmill is on the fritz right now).
