She told me that I don\u2019t eat enough healthy fats. She was a big believer in organic butter, coconut oil, olive oil, avocados, ect. Of course, I freaked out (minorly) about the idea of eating at ton more fats, even if they were healthy.<!--more--> (The thought in my head\u2026too much healthy fat = extra pounds)<\/p>\n<p>But she explained to me that fat is what helps balance the body (hormonally) and if you\u2019re getting your fat from healthy sources your body knows what to do with it. You won\u2019t get fat.<\/p>\n<p>Of course, this is taking into account that you\u2019re not eating processed foods, bad fats (hydrogenated, trans fat), or refined sugar.<\/p>\n<p>I was still skeptical. Then I talked to one of her receptionists after the appointment. This woman told me that she eats 2-4 tbsp. of butter at every meal! I almost flipped! She was a young 30+, blonde, thin, and very attractive woman (she also eat extremely healthy and doesn&#8217;t eat sugar or any processed, refined foods). She told me she couldn&#8217;t survive without her butter and she\u2019d never go back to her \u201cold days\u201d of miserable fat-free living.<\/p>\n<p>So this last week, I decided to up my healthy fats and see what would happen.<\/p>\n<p>So I had butter on my toast (NEVER margarine!). Coconut oil. Whipped cream in my Earl Grey. Olive oil on my salad. Homemade ice-cream (made from Sally Falon\u2019s <a title=\"Nourishing Traditions\" href=\"http:\/\/amzn.to\/S6gPIo\" target=\"_blank\">Nourishing Traditions<\/a>) with chocolate chips.<\/p>\n<p>&#8230;And avocado pudding. I had no idea that avocados had 5 grams of protein! Or that one avocado has almost 15 grams of fiber!!! That&#8217;s over half of our daily requirement! And it definitely has a lot of that healthy fat (smile). This is a great little nighttime snack for those of us who don&#8217;t want to have sugar or carbs after dinner. Both carbs and sugar (even healthy ones like honey or maple syrup) can spike your blood sugar, and before sleep is the worst time for a spike, especially if you&#8217;re trying to keep weight off.<\/p>\n<h2 class=\"recipeTitle\">Dreamy Chocolate Avocado Pudding<\/h2>\n<ol class=\"recipe\">\n<li>1 avocado<\/li>\n<li>1-2 packet NuNaturals stevia (I used one)<\/li>\n<li>1\/3 tsp. pure vanilla extract<\/li>\n<li>1 tbsp. pure cocoa<\/li>\n<\/ol>\n<p>*You can add a little <a title=\"How to Make Raw Almond Milk\" href=\"https:\/\/www.colourfulpalate.com\/2011\/05\/21\/how-to-make-almond-milk\/\" target=\"_blank\">almond milk <\/a>if you want it thinned out a little. I like puddings super thick!<\/p>\n<p>Blend it all up and top with a little whipped cream. Yummy! It\u2019s one of the few stevias that doesn&#8217;t have that yucky aftertaste that reminds me of licorice (not a fan!). Along with experimenting with more healthy fats in my diet, I really want to lower my sugar intake. NuNaturals makes this so much easier (because I\u2019ll never lose my sweet tooth!). Did I gain any weight after all that extra fat? Nope, I didn&#8217;t. I was pleasantly surprised.<\/p>\n<p>Plus, I don\u2019t think I barely snacked at all. I felt full and satisfied till meals (usually). I\u2019m pretty sure I even had a bit more energy.<br \/>\nI\u2019m still in the experimental stage though\u2026so we\u2019ll see how this all goes.
