I\u2019ll be gone for such a long time (two months!) on<a title=\"Going on the Road\" href=\"https:\/\/www.colourfulpalate.com\/2011\/09\/19\/going-on-the-road\/\" target=\"_blank\"> this trip<\/a>, you can imagine the time I\u2019m having packing. I never can decide what to pack, how much to bring, and always end up either over-packing or under-packing. No happy medium.<\/p>\n<p>It was so much easier when<!--more--> my sister Liz was at home\u2026she\u2019s an organization freak. She used to come into my room when I was trying to pack, watch me agonizing over pathetically small decisions, and then she\u2019d sweetly start to pack my suitcase! Seriously, that\u2019s true niceness. Now she\u2019s married and has kids and I have to pack all by my lonesome.<\/p>\n<p>That\u2019s okay. I\u2019m doing better. In fact, this time, I even thought ahead and have packed a special snack bag just for me. I will be nice and share (maybe). I want to keep my diet really clean during this trip because when you\u2019re on the road, food is so much harder to control. At least, I know that I&#8217;ve got some super healthy snacks to keep me sane when healthy food isn&#8217;t as available.<\/p>\n<p>Enter trail mix.<\/p>\n<p>Nuts, seeds, and dried fruit. It\u2019s really as simple as that. It\u2019s not science, just throw in all your favourites in a bowl, mix \u2018em up and throw it in a baggie. Lots of protein, healthy fat, and nature\u2019s sugar make this a great energy\/protein snack! Go crazy. In my evil sugar loving heart, I love adding marshmallows and peanut M&amp;Ms. I know you&#8217;re not shocked.<\/p>\n<h2 class=\"recipeTitle\">On-the-Go Trail Mix<\/h2>\n<ol class=\"recipe\">\n<li>\u00bd cup raw almonds<\/li>\n<li>\u00bd cup Craisins<\/li>\n<li>1\/8 cup raw pumpkin seeds<\/li>\n<li>1\/8 cup raw sunflower seeds<\/li>\n<li>\u00bc cup raw pecans<\/li>\n<\/ol>\n<p>Just mix it up! Other great additions would be raw coconut flakes, dried apricot (one of my faves!), raisins, and of course\u2026chocolate chips!<\/p>\n<p>I didn&#8217;t put in chocolate chips this time, because I\u2019m trying to stay off of chocolate for a while. I eat far too much of it and I\u2019m trying to avoid sugar because right now I really can\u2019t afford a cold. Me! Off chocolate!?? I know. It\u2019s really easy for me to overdo the nuts, but if I separate it into small portion sizes I realize how much I\u2019m eating. I\u2019m excited, but I\u2019m also sad to say goodbye to all my good friends and family here\u2026two months seems like such a while when you leave people you care about at home.
