You might be sick of me and my quest for high protein recipes, but I\u2019m just getting started\u2026haha. I guess I\u2019m just so happy about how much better I feel when I include a good dose of protein in my meals<!--more-->. And maybe because it seemed to help me shed a few extra pounds\u2026that\u2019s always a little bit of happy.<\/p>\n<p>This is a lovely, light, fruit salad just perfect for a hot summer\u2019s evening when you don\u2019t feel like cooking too much. It\u2019s creamy and sweet\u2026great for an evening picnic or a pool party. I had it two days in a row\u2026so delicious; it\u2019s almost like a dessert and main dish in one! Thanks to the chicken and quinoa each serving has 18 grams of protein!<\/p>\n<h2 class=\"recipeTitle\">Quinoa Chicken Summer Salad<\/h2>\n<ol class=\"recipe\">\n<li>\u00be cooked, organic quinoa<\/li>\n<li>\u00bd cup cooked chicken, diced<\/li>\n<li>2 tbsp. low fat mayonnaise<\/li>\n<li>1 orange, squeezed<\/li>\n<li>\u00bc cup mandarin segments<\/li>\n<li>\u00bc cup green grapes, halved<\/li>\n<li>1\/3 cup fresh pineapple, chopped<\/li>\n<li>\u00bc cup toasted almonds<\/li>\n<\/ol>\n<p>Combine all the ingredients, except the almonds. When ready to serve, gently toss in the toasted almonds. I can just toss a Tupperware into my bag as I\u2019m leaving and I have my meal already! This saves me money and ensures that I will get something that\u2019s actually nutritious. I thought fall had come\u2026it was cold and the air felt \u201cdifferent\u201d. Then I noticed that some of our leaves are turning! I\u2019m almost ready for autumn, but I\u2019m not quite there yet! There\u2019s a lot more volleyball to be played!!! Thankfully, the weather turned hot that afternoon and I\u2019m feeling more \u201cat peace\u201d right now, haha.
