So who else was swept up in the excitement of the Royal Wedding? I guess I got a bit sucked in…but hey, I’m a girl and I like weddings and pompous occasions. After falling asleep a little past midnight I woke up at 3:30 a.m. to watch the wedding live. My sister, Mom, and I made a party of it and had an English breakfast at 4:30 of homemade scones with butter and jam and black tea with milk.

We cuddled up on the couch in our PJs, grabbed blankets and pillows and got comfy. It was a special memory, for sure. Wasn’t her dress beautiful? I loved the lace sleeves. I don’t know about you, but I hate these strapless dresses that have been in foreeeever. They’re not flattering. Put bluntly, they make thin girls look fat and fat girls look fatter. Did I just say that? To the point…Kate’s dress was stunning.

Some people got a little too crazy over the whole affair though…like the man who got a tattoo of William and Kate on his two front teeth…or the company that produced a special edition fridge with their picture plastered all over it…or the sick bag decorated in honour of the to-be-wedded couple (I mean, really??). So in comparison, really…I wasn’t all that nuts about it. It’s not like I’m buying porcelain thimbles with their tiny pictures on it or anything.

Here’s the recipe that I made in honour of the wedding. Whole wheat English scones. You have no idea how amazing they are with real butter and fresh strawberry jam. I had two. Two large pieces. Because. They. Were. So. Good. And did I mention that they’re super healthy? I used only organic whole wheat, no white stuff here. This makes 6-8 large scones.

  1. 2 cups organic whole wheat flour
  2. 1 tbsp. baking powder
  3. 2 tbsp. organic cane sugar
  4. ½ tsp. sea salt
  5. 3 tbsp. butter
  6. 1 egg
  7. ¾ cup cold organic rice milk*

*Or you could add an ice cube to cool it down super quick like I did.

Mix dry ingredients together in a medium bowl.

Once that’s checked off your list, cut in the butter until the mixture looks a bit like coarse crumbs. I used my hands because it’s just the easiest thing to do and it’s oddly satisfying. Then add the egg.

Gradually add the rice milk (it might take a little more or a little less) until a thick dough forms.

Turn out the mixture on a floured surface and form into a flattened ball.

Place on parchment paper lined pan. Dust lightly with flour. Bake for 20-30 minutes at 400 degrees until baked. These are best served warm, but since there was no way I was making scones at 3 o’clock in the morning to have them fresh, I made them the day before (and they were still amazingly fantabulous!).

Top it with butter and jam or if you’re daring, break out the clotted cream! Don’t forget to drink tea with it. It’s the way of the British. I’m planning on spending the rest of my day with a huge pot of it by my side. As for the scones…they are all gone. So the tea will be lonely.

The rest of the royal holiday I sort of puttered around in a daze. I’m not used to existing on three hours of sleep, but the excessive amount of chocolate I consumed helped I’m sure…I’m still not sure if everything was funny or if I entirely lost my sense of humour, but I’m sure tomorrow I’ll begin to being normal again (yah right).

I got a lot done on my self-portrait that I had started though (for my Art Challenge), so that was a plus.

And besides the wedding, another bright spot of my day was my yam fries and secret sauce we had for din-din. I could drink that sauce, it’s so good. But that would be inappropriate, so I didn’t.

    I missed the wedding, but I wish I didn’t… I love Kate too (or may be we should call her Catherine already :). The dress was also lovely, the lace details especially…

    Oh, and your cake looks yummy! The tea and the tiara are the perfect additions ;)

    I agree about the strapless gowns. I photograph weddings when I don’t bake :-) and it is so hard to make it look original each week because they all end up looking the same. Just not as flattering for most, but Kate’s dress was just divine.

    Okay, enough about that, onto the scones. I like that this is simple, but I love even more that all the ingredients are sitting in my kitchen right now.

    Ha, I love the tiara. There’s a reason why I still use one of my wedding pictures on my blog, and that reason is that I’m wearing a tiara. :) The scones look delicious.
