Low Carb Chocolate Ice-Cream

Low Carb Chocolate Ice Cream Recipe

I have not slowed down since I made that blueberry ice-cream. Blame cravings, the sunshine, or my desire to make ALL the flavours, but I’m hooked.

The chocolate one I made with half the fat and half the calories as last time. It literally tastes like a fudgesicle in a bowl. I topped my chocolate ice-cream with these raw cacao nibs. Serves 4 (or 3 large servings).

 Low Carb Chocolate Ice-Cream

  1.  1 cup almond milk
  2. 1/2 cup heavy whipping cream
  3. 1/2 cup cottage cheese
  4. 1/4 cup cocoa
  5. 1/8 cup chocolate stevia syrup
  6. 1 tsp. pure vanilla extract

Blend all the ingredients together until smooth. Add to ice-cream maker according to manufacturers instructions.

*You can use any stevia based sweetener, just add according to taste. I used this NuNaturals chocolate syrup.

Also, prepare yourself. I have another ice-cream recipe coming up next. Told you I was hooked.

Is this sunny Spring weather making you crave frozen treats?

I don’t do dairy these days, but there was a time when I made something similar. I bet yours tastes good. It’s nice to see you blogging again.
