Low Carb Raspberry Cheesecake Pancake

I was going to make something ridiculously chocolatey. You know, in keeping with the whole Valentine’s Day thing. However, this other recipe came into my mind and kept pushing chocolate off to the side.

Raspberries won over the chocolate. I’m not looking back.

This pancake is completely sugar and pretty much carb free…it tastes like dessert, but it’s high in protein. The only thing I may regret is not having whipping cream in my fridge. That would’ve taken it to a whole new level.

This would be the breakfast in bed of my choosing, preferably with Thor delivering it in person. Well, a girl can dream.

I digress. Just eat this.

Low Carb Cheesecake Pancake

Low Carb Raspberry Cheesecake Pancake

  1. 2 organic eggs
  2. 3 ounces cream cheese, softened*
  3. 1 tbsp. plain, thick yogurt
  4. 1/4 cup raspberries
  5. 1 packet Truvia**
  6. A few drops of vanilla
  7. Pinch of pink sea salt

*You can just heat it in the microwave for 30 seconds so it stirs easily into the eggs.

**I also use NuNaturals no carb NuStevia, just a couple tiny shakes! This stuff lasts forever!  

 Stir all the ingredients together in a bowl. Pour half the batter into a pre-heated non-stick pan (with a little butter or coconut oil added to the pan). Cook until each side is done. Cook the other half of the batter. Makes 1 thick pancake or 2 thinner crepe-like pancakes.

This whole recipe is under ten carbs! Unless you make it a full out logger’s breakfast and add some swirly toast. Also, if you love (which you will!), you can check out my variations on these pancakes!

I’ve still been drinking my coffee, don’t get me wrong. However, I’m trying to cut it down…so loose leaf tea (especially Youthberry) has been my go to.

I can only imagine this recipe paired with this decadent dark chocolate smoothie or this chocolate peanut butter shake (both low carb options)!
