Ever since I was small, I’ve had a taste for pickles.

I guess I like vinegar. Pickled onions, dill pickles, salt and vinegar chips…they are one of those flavours that I could be slightly addicted to. Also, while I’m on this topic, can we just talk about pickled beets? Oh my Atlanta. So good.

However, I reached a whole new level of happiness when my Mom let me try some pickled eggs she made. Guys! You have no idea how good they are!

Okay, anyway. I like pickles. I think I made my point.

Pickled Eggs Recipe

You’ll just have to make them. They are the perfect afternoon snack.

I probably eat 2-3 eggs daily and I’m beyond delighted to add this to my recipe repertoire. This makes 10-12 pickled eggs (depending how many you can cram into a jar) or 1 quart.

 Pickled Hard-boiled Eggs

  1. 12 organic eggs
  2. 1 cup white vinegar
  3. 1/4-1/2 cup seasoned rice vinegar
  4. 1/2 tsp. pure sea salt
  5. 1/2 tsp. freshly ground pepper
  6. 1/4-1/2 sliced white onion

Hard-boil your dozen eggs. I refuse to tell you how to boil an egg. You know how. Peel the eggs and stick as many as you can into a large mason jar. Add the onion at the same time.

Bring the vinegars and seasoning to a boil. Pour over the eggs until covered and seal. Let sit in the fridge for 2 days.

One of my favourite snacks is pickled eggs - full of protein and so so delicious
