I think this year was my very first New Year’s Eve party where I didn’t have one grain of sugar. When it comes to holidays or special events, I don’t usually say no to dessert – I eat healthy enough during the week, that a splurge on the weekend isn’t a big deal. However, this time, I wanted to emphasize my healthy eating habits before January 1st. I know how I am after one bite of chocolate…I can’t say no to another. Nope.
This resolve carried over to my low carb snacking choices. On New Year’s Eve, I filled up on lots of veggies, shrimp, and cheese. Have I ever mentioned how much I love cheese?

However, while I don’t have anything against normal kinds of cheese, I sometimes like to have a lower calorie cheese for snacks. Yet, I don’t like to sacrifice taste for healthy or low calorie option. I think food should always be delicious. Always.
And this cheese is especially delicious.
Laughing Cow cheese has cream cheese flavours now…and I’m digging them. It’s smooth and delectably creamy at only 45 calories per wedge! I love the light version of this (even less cals!) on a piece of sprouted, whole grain toast or bagel topped with homemade jam. Even just having this cheese on the side with a bowl of fresh fruit is divine.
Another combination I love is real bacon bits sprinkled on top of the LC cream cheese. It’s addicting.
The White Cheddar cheese flavour is delicious spread on apple slices and I love ALL of the flavours on thin pretzels or flax crackers.
Sometimes I even just get this “craving creamy” feeling and popping one of these cheesy wedges in my mouth is just perfect. Don’t tell me you don’t do this!?
