Recently, I was challenged to try a new food. You know all those bloggers that try a new vegetable every week…well, I got stuck in a rut with buying the same groceries over and over and decided to try a culinary adventure and experiment on something that can be prepared on a microwave. It wasn’t that bad as I was able to prepare good food and save energy along the way.
I decided to try Mackerel. Now, if you know me, you’ll understand I like fish, but I’m a little choosier about what kind. Perhaps it’s my prairie upbringing, where beef and chicken are “where it’s at”, but I have a little trouble with certain kinds of seafood. Calmari is like eating rubber. Sea cucumber is just not nice. Prawns are just so big…I don’t know what to do with it.
Typically, I end up with Salmon, Herring, or Tuna. For me, they’re the safe seafood.
So, I decided to go out of my comfort zone and try something new. I bought a can of Mackerel (because I couldn’t find it fresh anywhere!) and then wondered what I was going to do with it. What I came up with, was a simple appetizer… perfect for an East coast dinner, maybe with seafood chowder and a green salad. The result was actually quite delicious.
These are super quick to whip up and literally take two minutes to make. I used the microwave to heat the appetizers up. If you want to eat this as a healthy snack or light meal, but don’t have much time, you can just use a microwave to cook it perfectly every time. Easy peasy. Serves 6.
Gluten Free Soft Mackerel Tacos
- 6 gluten free, soft corn tortillas, small
- 6 tsp. cream cheese
- 1/2 can of Mackarel fish
- 1/2 cup Italian parsley leaves
- 1/2 lemon
- Sea salt and pepper, to taste
Rinse the fish from the can and cut into small pieces.
Spread the cream cheese (about 1 tsp) on each tortilla. Top with fish and a few parsley leaves.
Squeeze fresh lemon on top and sprinkle salt and pepper on, to taste.
Microwave for 20-30 seconds and serve warm.
