Cookie Dough Energy Bites

Hi, I’m Kelly from Free Spirit Food, and I’m super excited to guest post for Charissa because I love her blog!  Great recipes and inspiration.  I try to eat as healthy as possible, but I definitely have my moments.  I want to share with you a favorite “healthy” recipe that tastes delicious and is also really simple to make!

These are my Cookie Dough Energy Bites!  You won’t believe the main ingredient…chickpeas!  Sounds gross, but just try it.  You’ll be converted.  Even my husband has to admit they really do taste like cookie dough! I love to make these for a post-workout snack and I also eat them for breakfast.  Yum…

Cookie Dough Energy Bites

  1. 1 can chickpeas
  2. 3 Tablespoons nut butter of your choice
  3. 2 scoops protein powder (optional) – I put protein powder in everything!
  4. Sweetener of your choice, to taste – I use 3 packets of stevia and 2 Tbsp of agave*
  5. 2 Tbsp almond milk
  6. 1/4 cup of quick oats
  7. 1/4 cup of mini chocolate chips

*If you aren’t familiar with stevia though, I would use about 3 Tbsp of agave.

To begin, rinse and drain your chickpeas well.

In a food processor (I don’t have one, so I use my blender), Blend the first five ingredients until combined well.  Then, mix in your quick oats and mini chocolate chips by hand.  The dough should be thick enough to form a ball but not clumpy. You may have to add more oats to get a firm enough consistency.  When the dough is thick enough, roll into balls.  Done!  Enjoy immediately or refrigerate.

These are best enjoyed within a few days of making because otherwise the chocolate chips get “soggy”.
