I remember my first time eating gelato…it was at a huge, indoors Farmer’s Market and I had never even heard of the Italian ice-cream. It was perfect…it wasn’t as rich as ice-cream, but it was still so creamy. I loved the consistency, smooth and silky…almost like it was half mousse and half ice-cream.
I’ve wanted to recreate gelato for ages, but somehow I ended up forgetting. But a couple weeks ago, our family band was traveling home from a concert and we found a quaint little gelato shop inside a gas station. It had dozens of flavours which made me quite giddy. The nice Asian man was eager to please me so he let me taste three flavours, allowed me to have two flavours in my bowl instead of one, and ended up giving me the biggest size for the price of the smallest. That’s service! I tried egg nog and lemon… both which were scrummylicious.
So now, finally…I have tried to make my own vegan version of Gelato and it came out just perfect! I’m rather pleased with myself.
Vegan Coconut Gelato
- ¼ cup unsweetened almond milk*
- ½ cup light coconut milk
- 1 cup organic, original rice milk
- 1/2 cup organic sugar
- 1 tsp. vanilla
- 1 scant tsp. guar gum
- Pinch of sea salt
- 6 cubes ice
*I used this almond milk recipe
Blend all the ingredients. Put in your ice-cream maker according to the manufacturer’s instructions. Serve in little gelato bowls with small spoons. Garnish with a little toasted coconut. This serves 4.

So how was your Father’s Day? We had such a special day together…I love my Dad so much. He is such a superhero to me…he has such a sweet, understanding heart and I love him so much. He will do anything and sacrifices so much for his family.
